Y’all – I am on this detox and it is H-A-R-D … mostly because I want coffee like it’s nobody’s business. And my headache has gone strong for days. Want to feel my pain for a moment? No caffeine, gluten, grains including corn, nuts, eggs, dairy, meat besides fish, sugar including honey. Now, I usually eat gluten/dairy/meat/sugar-free, but I sure do like my honey and coffee.

On the bright side, some of the food on this plan are A-M-A-Z-I-N-G! One of the dishes called for salsa over fish. I altered my usual salsa recipe and the results are my new favorite! And, bonus!, it’s so easy and fast your kids could do it.

Easiest & Tastiest Salsa Ever

  • 2 heirloom tomatoes
  • 1/2 red onion
  • 1 large jalapeño
  • 1 lime
  • Himalayan pink salt
    Dice tomatoes, onion and jalapeño. Mix together. Sprinkle with Himalayan pink salt. Squeeze 1 lime over it all. Mix well and refrigerate for a few hours at least. Eat it on everything!


    Meal suggestion: Use it as dressing on a Mexican-style salad with sprouts, avocado and black beans. (This is quickly becoming one of my favorite salads.)
